This is where the hungry come to feed. For mine is a generation that circles the globe and searches for something we haven't tried before. So never refuse an invitation, never resist the unfamiliar, never fail to be polite and never outstay the welcome. Just keep your mind open and suck in the experience. And if it hurts, you know what? It's probably worth it.

pasta carbonara.

i love to make pastas and here's one i made last week.. i tend to make this dish when i 'm craving bacon. i know weird, but it is delicious and actually quite simple to make. definitely could pull this one out in 30 minutes.






ingredients:
1pkg spaghetti rigati
1 lb pancetta or bacon
1 onion, chopped
5 cloves of garlic, chopped
3 eggs
1 cup of freshy grated parmigiano-reggiano
2 tbs of heavy cream
salt and pepper, to taste

First, dice and cook down the bacon/pancetta into bite size pieces, and set aside. Drain the oil, and saute onion and garlic in the pan. When the onion and garlic are tender, turn off the stove and add the bacon/pancetta back to the pan.

Cook the spaghetti until al dente. While the pasta is cooking, whisk the eggs, parmigiano-reggiano, cream, and salt and pepper together in a bowl.

When the pasta is ready, drain the pasta and add too the onion/bacon mixture. Immediately add the egg mixture and toss together. (The hot pasta cooks the egg mixture)

VOILA! it's delectable.
