last week i had purchased some boneless pork loin chops and was thinking of of what I could make with them. and then came pork scaloppini, with a side of orzetti pasta (cooked in chicken broth). it was quite.. YUM.
INGREDIENTS:
¼ cup all-purpose flour
½ tsp. salt
¼ tsp. ground black pepper
4 boneless pork loin chops, cut 3/4 inch thick (about 4 oz. each)
1 Tbsp. olive oil
1 Tbsp. capers
1 Tbsp. chopped green olives
2 cloves garlic, minced
1-½ cups dry white wine
1 Tbsp. grated lemon peel
DIRECTIONS:Combine flour, salt and pepper on sheet of waxed paper. Lightly dredge pork chops in flour mixture, shaking off excess. In a large skillet, heat oil over medium-high heat until hot. Add pork chops and cook on both sides until golden, about 8 minutes. Transfer to a plate, set aside. Drain fat from skillet; add capers, olives and garlic. Cook, stirring over medium heat for 2 minutes. Add wine, lemon peel; bring to a boil. Return pork chops to skillet. Cook over high heat until pork is heated through and sauce is reduced by half, about 8 minutes. ENJOY!

r i d i c u l o u s
the amount of blogging that i have done in the past 2 months is ridiculous, especially in comparison to the amount of blogging that i have done since 2004. what is also ridiculous, is my usage of the word 'ridiculous'. i can't stop saying it, and it's not the same as bringing money back. i really should find a replacement word, cause it's really getting pretty ridiculous.
so today, as i was about to push open the door to the women's restroom at work it swings open and there is a guy standing there. we look at each other, both with equally shocked expressions. mine of confusion, his probably of embaressment. he excuses himself and apologizes profusely. i had to double check the sign on the door to make sure i was standing infront of the women's restroom. i'll take his error as a 'it's monday and i'm still hungover' mistake.
saturday night, me and the hubby ventured off to see body world's 3, before it leaves Houston next week. i ordered our tickets online, because of the well, ridiculous lines that we saw when we attempted to go with roz and d a month ago. i purchased the last time available, while most all others were already sold out anyways. we get in and it is jam packed. the hubby was enlightened and enjoyed the exhibition.. i on the other hand found it a little bit creepy. i think it was the random poses/positions that they put the people in. trapeze lady? pedaling upside down?
sunday, dru went to get his haircut without permission, supervision, and/or guidance. tsk tsk. good thing he remembered some of the rules that were previously given to him. ( ps. dru if you need assistance in styling, let me do it! *insert evil laugh*) anyways i met up with him afterwards to look at some new spec's. emosaurusrex is on the way.

renji went to the groomer 1 1/2 weeks ago and aparently he had some matted fur that could not be fixed, which resulted in a '1' all over. his body now resemebles eddie from frazier, while his face is still renji-esque.
the hubby also has a new hair style. any compliments that he receives should be redirected to me.

today the main event begins showing on espn. and it's entertaining for some... mainly of the male gender.
i know it's strange, but i can't watch golf, or tennis on television, but poker i'm totally ok with, and even enjoy. i have my favorites, and root for them until.. if and when they get knocked out, then i select another. i can't even play hold 'em. well i can. but i lose... alot. and i get high anxiety when i play. but watching is something i can do. especially after meeting a few of the ranked players and seeing the wsop tournament action live. i'm not sure what it is.. the chip leader vs. the short stack, big blinds, doubling up, the flop, the turn or the river, going heads-up, getting pocket ace's, or getting the nuts.

so just because my buddy xd came to town, i made dru come out with me on a Friday night... to Next.. which ended up being AZN like you wouldn't believe.. i was sorta embarressed to be there. (ps. we actually had no choice of picking a place to meet up since xd was rolling asian dudes deep..) when me and dru arrived i was like... wth, they charge cover? caucasian clubs don't charge cover.. then once we went inside, omg so scared. me and dru proceeded through the smoke filled crowd, chatted a bit, when i realized that I was probably smiling way to much for this scene. dru then told me to put on my hardcore emo face. so the club was full of AZNs but not entirely packed. so with the high number of AZNs in houston to the number of people actually at next. you would assume the chances of running into.. i dunno ex's would be low. aparently not so. ran across 2 of mine and 2 of my lil sis jenn's. it was a night of avoidence, to say the least. thanks to dru for always pointing me in the right direction when needed. but the dancing like nobody was watching made up for it. for the most part. oh and making dru's hair stand up was fun too. please see the before and after shots below.

i showed my wrists.
last night i joined in celebrating the moments of our lives during dinner out with some fabulous friends. i finally made it out to one of the Lin Lin and Yen's, bi-weekly (or monthly for me) gatherings. please note that i say no for ever having such an event at rickshaw again. for dinner anyways. i was hungry again, five minutes after finishing my food.. but it was good times as usual... and i think that it should be duly noted that, i have a life that is my own... no need to want.

went to the mall the other day and met up with dru and his lil bro. while in line at express we somehow got into the following conversation after discussing the resemblence of dru's lil bro's old hair style to that of trick's.
dru's lil bro: who's trick?
dru: the ultimate emo guy
dru's lil bro: like 'dashboard emo'?
dru: yeah, actually no, she's 'dashboard emo' (pointing to me)
me: yeah i'm 'dashboard emo', and trick is 'i love you but i've chosen darkness' emo.
dru: (nods in agreement)
since there seem to be different variances of emo here's my breakdown (sans band names) for persons that i know:
trick = all things emo plus a dash of goth emo
issa = acoustic and sometimes punk emo
dru = indie + sometimes happy can be emo too emo
d = studio but so not proverbial emo

pasta carbonara.
i love to make pastas and here's one i made last week.. i tend to make this dish when i 'm craving bacon. i know weird, but it is delicious and actually quite simple to make. definitely could pull this one out in 30 minutes.
ingredients:
1pkg spaghetti rigati
1 lb pancetta or bacon
1 onion, chopped
5 cloves of garlic, chopped
3 eggs
1 cup of freshy grated parmigiano-reggiano
2 tbs of heavy cream
salt and pepper, to taste
First, dice and cook down the bacon/pancetta into bite size pieces, and set aside. Drain the oil, and saute onion and garlic in the pan. When the onion and garlic are tender, turn off the stove and add the bacon/pancetta back to the pan.
Cook the spaghetti until al dente. While the pasta is cooking, whisk the eggs, parmigiano-reggiano, cream, and salt and pepper together in a bowl.
When the pasta is ready, drain the pasta and add too the onion/bacon mixture. Immediately add the egg mixture and toss together. (The hot pasta cooks the egg mixture)
VOILA! it's delectable.
